Thai lemongrass soup

I made this dish inspired by 2 of thailands most popular soup dishes, called -Tom kah gai and Tom yum goong of course making it at home means I can customize it to my preferences. 😊 When cooking Thai food it’s necessary you have the basic spices I have attached a photo below – if you have these you can make almost any Thai soup πŸ˜‰

PS- please avoid using the canned ones they sell in the groceries I’ve bought them before
Like crushed galangal in a bottle; or crushed ginger – you will not get the flavor you want out of them so if you can get them fresh as much as possible Please do so.

I tried making the Tom kah gai before but it seemed to lack the rich flavor I was hoping to get – tried an tested I was able to make the perfect one using chicken stock. If you wish to make just the Thai chicken soup you can follow the same recipe below just replace the shrimp with chicken and it will taste perfect ✌ Rich and creamy !

Below is my Version of Thai lemongrass soup :

Ingredients :

10 prawns (shrimp), medium size
4-5 cups chicken broth/soup stock
1/2 cup -can straw mushrooms
1 1/2 cup coconut milk
2 stalk lemongrass (cut into 3-inch lengths and pounded)
6 kaffir lime leaves (lightly pinched to release the flavor)
6 slices galangal ( you can use ginger to substitute )
3 tablespoon fish sauce
1 tsp sugar
1 tsp. chili paste
Red chili pepper ( depending how spicy you want you soup to be )
2 1/2 tablespoon lime juice
1 tablespoon chopped cilantro

Cooking Method:

1.) Wash the prawns properly, if you wish you may peel them, I kept them on for the flavor.

2.) Bring chicken broth to a boil. Add lemongrass, galangal and lime leaves. Bring back to a boil then add mushrooms, fish sauce, chili paste, sugar, and lime juice. Add prawns and fresh red chili peppers. As soon as prawns turn pink (cooked through) serve garnished with cilantro.

Unfortunately I wasn’t able to get the picture with the cilantro in it. πŸ˜” simply sprinkle the top of your soup with cilantro and Serve nice and hot !
